Seitan is a wheat-based protein (first documented in the 6th century by monks in China!). The starch and bran in wheat is filtered out until you are left with vital-wheat gluten, which is very high in protein. We buy the vital wheat gluten in flour-like form and mix it with lentils. Together, these two ingredients form a complete protein because lentils add Lysene, which wheat gluten is low on. We then add some extra flavor to the base: soy sauce, apple cider vinegar, onions, among other things (see back of bags for full ingredients), and then mix it all like a dough, bake it like a bread, slice it thinly, marinate it with our signature flavors, and dehydrate it to jerky perfection. It is a long process, but the end result is worth it.
